I never much cared for Mexican cuisine when I was a wee lad, mainly because the only Mexican cuisine I had access to was Taco Bell and Old El Paso. I've come a long way in changing that over the last few years, so when I stumbled across this recipe for Turkey Chimichangas, I couldn't resist! A chimichanga is basically a fried or baked burrito. So you usually have some kind of ground meat, beans, and other Mexican fixins' all mixed together, folded up in a tortilla, and cooked up! I baked mine because it's easier and way healthier. I've never been a big fan of the texture of beans... I did use them here as prescribed but I wish there was some other option. Even some kind of vegetable? Hard to say what would be a good alternative.

Highly recommend serving with guacamole or sour cream or perhaps some salsa! And I'll caution you, they're still super hot inside even 5-10 minutes after coming out of the oven. Serve with caution (and perhaps with a cooled version of one of those accessories to keep the heat down!) Bon Appetit!
