This one comes from the Best of Bridge cookbook which was given to me by my mother. Since the recipe is in a book, I won't share it here on the page, but if you're interested, let me know and I'll send it to you.
In short, you roast a bunch of peppers in the oven, then boil them up with some bacon, potato chunks, and herbs in some chicken stock. When it's all heated up, put the whole thing in a blender/food processor (or use an immersion blender) to puree it all. Delicious flavour - I think next time I may use more bacon and slightly less broth as it wasn't quite as thick as I would have liked it.
Bread for dipping and we're good to go! Start to finish probably 90 minutes... lots of hands on with a few off breaks but I used those to clean up and do dishes.
