From pancakes to...Thai food! Why not?
I was pretty pleased with how this turned out, and it was pretty easy to make. Like most stir frys, really helps to have everything cut up and prepared before you turn on the heat because the cooking process probably takes 5 minutes tops.
Some of the comments on this recipe in Fine Cooking recommended serving over white rice... that's -okay- but you don't end up with much sauce here to mix up with the rice, so the rice serves more as a cooling medium for the spiciness of the beef.
Which... by the way... at least by my definitions, is spicy. Used only two Thai chili peppers in the whole recipe but wow, hot! Maybe start with one if you're not into spice and see how that grabs you.
Back to accompaniment: the original recipe suggests a cool noodle or rice salad. Something with a bit more flavour. I concur. I also suggest 1.5x or 2x the recipe as you don't actually get a whole ton out of this. When selecting beef, pick something reasonably tender and also thick is good so you get nice wide strips instead of long narrow ones.
