The culinary geniuses over at Fine Cooking delivered this little recipe to my inbox yesterday... since I hadn't made my meal plan yet for the week I decided to make it last night. Description looked great - I'm always a fan of caramelized onions, and I had some left over hot peppers from last week's spicy beef stir fry! Easy to find all the ingredients for here, too.


To be honest, the end result was underwhelming. It was good, but not spectacular. There are probably a half dozen other pastas I'd gladly make before trying this one again. For one, it calls for a HALF CUP of butter. That's a HUGE amount of butter! The butter basically makes up the sauce, along with the caramelized onions, hot peppers, and some cheese (called for Pecorino but I used Parmesan). So, as you can imagine, very... buttery. 

The "gremolata" described in the article was a nice addition of colour, but didn't really pull the whole thing out of the butter. So, it LOOKS nice (see above) but if you look carefully you'll see some drops of the almost-entirely-butter sauce.

I also only had salted butter while it called for unsalted, so I toned down the added salt, but actually found it could have used more.

It was good enough for me to share with you... and it is a vegetarian option (though I think it would have been well served by some kind of meat). Very easy and cheap to make - give it a go if you like and let me know if you try and twists to spice it up a bit!
